The soft white flesh of young coconuts makes a nutritious and delicious base for dairy free and mayonnaise free creamy dressings. We
suggest using raw verges that won’t wilt with the dressing if making in advance, such as leek, capsicum, snow peas, radish, mung beans, cabbage, carrot, cauliflower, broccoli, fennel goes well with this too.
If adding dressing at time of serving, you can use softer, leafier vegetables such as kale, lettuce, spinach, rocket, tomatoes, cucumber, mushrooms, alfalfa, zucchini, or cooked pumpkin. Mix things up a bit by adding nuts and seeds like pepitas, sunflower seeds, walnuts, cashews, almonds or pecans.
